Saulnois comes from the Lorraine region of North-Eastern France. Its unique flavour is attributed to its affinage, which involves being soaked in Marc de Mirabelle, a local golden plum brandy. Aged by affineur Rodolphe Le Meunier, the cheese develops a flavor that is balanced, rich and condensed. The unique soaking process also influences the cheese's flavour with fruity flavours coming through and slightly nutty undertones. The texture is dense, yet smooth when chewed and has a hazelnut rich aroma. Great on its own, used in a salad, or melted as you would a Raclette
