Unlike many Lombardian Robiola, which tend to be washed-rind cheeses, the Robiola Nostrana is a delicate, mild bloomy rind cheese. The name underscores that this is a local cheese made authentically in the time-honored traditions of Brescia and Cremona and has a special place in the heart of the cheesemaker.
The production method begins much as it would for Taleggio. However, this cheese is never washed during the aging so never develops the pungent orange rind. Instead, after a 60 day aging period, the cheese develops a thin, edible bloomy white rind. The final product is soft, rich and supple and has a mild, yet layered flavor of sweet cream and the earthy notes of the rind.
