Extraordinary & majestic like its namesake, the highest mountain in South Tyrol, this cheese is called “Ortles”. It’s wrapped in a firm, dark, waxy rind. Ortler is a light-to-straw-colored yellow, furnished with broken and slotted holes. The consistency in the palate is compact but still smooth and lightly crumbly. The cheese’s aroma is milky and nutty and contains light notes of pistachios. Additionally, the taste is dominated by a pleasant, spicy flavor.
