Garibaldi di Vacca is a new take on an old tradition-- the mixture of blue cheese and dessert wine. Garibaldi is a small format cheese, weighing in at just over a pound per wheel. Made with whole, pasteurized cow's milk, Garibaldi di Vacca's flavor is reminiscent of a classic mild Italian blue like Blu del Moncenisio -- earthy and chocolatey. The addition of Marsala wine gives this blue a sweet, slightly alcoholic aftertaste that harmoniously blends with the saltiness of the blue cheese.
