Rumored to be a form of currency during the time of Charlemagne rule, Appenzeller is still Appenzeller to this day, one of Switzerland's most popular cheeses. Traditionally the wheels are released at three different aging stages: Classic - aged 3 to 4 months, Surchoix - aged 4 to 6 months and ultimately Extra - aged for at least 6 months and adorned with a black label. As our Swiss collection is limited, we only offer Black Label. During the aging process, wheels are rubbed with a brine that is often seasoned with wine, spices and often time honored secret ingredients, specific to each maker. These added flavors enhance the nuanced characteristics of the Appenzeller with notes ranging from nuttiness to hints of piquant spice.
