This cheese is named after the impressive peak in the Valle Aurina, in the Italian Dolomite Alps.  It is wrapped in a dry, black rind which emphasizes its special features and captures its powerful aroma. The cheese paste is light to straw-colored, and is completely sealed. The "Sasso Nero" has a solid and crystalline texture, lightly melting in your mouth.  Its special aging process gives the Sasso its aromatic spice, fine notes of roasted chestnuts, dried fruits, and honey. The aftertaste has caramel and chocolate flavors. Truly a delicious cheese with complex character and recognition.
