Stracciatella is famous as the filling of one of Italy's most beloved cheeses: Burrata. Mild, milky and rich, stracciatella is a fresh, stretched curd (or 'pasta filata') cheese. Coming from the word 'stracciare' meaning to 'tear up', stracciatella consists of small, 'torn' pieces of fresh cow's milk cheese mixed with a touch of cream.
