This new offering from producer Cremonesi features a dense yet creamy paste studded with prominent crystalline structure. Tapering from a creamy off-white at the center of the wheel to deep reddish brown near the rind, this cheese offers flavors that range from sweet cream and hay to slightly musky earth tones. While it certainly can be grated over pasta and other dishes this special item is best saved for serving at the table, paired with any number of condiments or simply on its own, allowing the swarthy richness of the goat’s milk and the kiss of the aging cellar to shine.
