Fresca Italia is pleased to introduce Fiore di Pascolo! This beauty is produced in the lower Brescia in Lombardy. Production uses fresh pasteurized cow’s milk collected daily from the pastures, hence the name. It has a sweet and delicate taste with a compact paste. Its most typical feature is certainly the holes: from the size of a cherry to those of a walnut, they are formed during the maturing process. It is excellent eaten alone or used to prepare appetizers, pasta dishes and savory pies.
