Il Crudo is a Tuscan pecorino made following an ancient recipe. The milk comes exclusively from the producer’s freely grazing animals and is used raw at a temperature that never exceeds 40°C, so as to fully preserve the aromas and flavors of the pasture. Following these rules allows for maximum quality production, although with limited quantity. The wheels are selected and fire branded one by one before they are carefully aged for 4 months on salvaged boards previously used for aging Parmigiano Reggiano; the making of Il Crudo is indeed a slow and difficult-- albeit very much worthwhile-- process.
