Fleur de Nuit
As with all of Rodolphe le Meunier's cheeese, extreme care is taken in honoring the time old traditions of cheesemaking, utilizing only the best ingredients in order to produce cheese leagues above the rest. His Fleur de Nuit is no exception. Modeled after Chaource, a regional favorite, the Fleur de Nuit is a soft ripened, cow's milk cheese that has a butter fat content of a double cream. The flavors tend to be a tad earthier with a bright and spring like finish.
Le Meunier is but a few affineurs in France that is adorned with the recognition of MOF, Meilleur Ouvrier de France, a prestigious award given only after passing a series of rigorous cheese oriented tests. This certification is worn with pride as a red, blue and white stripe along the collar of one's chef jacket.
